The savory fiesta parfait, created to be compliant with school lunch nutrition standards, has been a popular menu item on the Wayne campus. The layered, single-serve recipe includes yogurt, black beans, corn, cheese, lettuce, and salsa.
Franc is looking forward to bringing back the nutritious dish next year. “The fiesta parfait will be a staple item on our cafeteria menu, since it was so well-received. We will continue to work on new and exciting menu options for 2021 to make students excited about eating school lunches,” said Franc.
