The Culinary Team competed on Friday, 5/11 and prepared a 3-course meal of foie gras french toast with poached pear, lamb chops with sunchoke puree, and Israeli honey cake with cherry gelée. Their remarkable 4th place accomplishment allowed PCTI’s ProStart Culinary team to be honored with scholarships to CalPoly Pomona, Culinary Institute of Michigan, International Culinary Institute, Louisiana Culinary Institute, Mississippi University for Women, Swiss Education Group, and cash! Award totals were an outstanding $18,500 per student!
The ProStart Program is a two-year high school curriculum structured to build strong character and job skills. Many ProStart students volunteer to spend hours outside of their normal school days working on their skills to compete. Once the curriculum is complete, many will go onto immediate jobs in the foodservice industry or be offered college scholarships to further their education. NJ’s ProStart curriculum is recognized by over 60 colleges and universities as a comprehensive program.
